Westport On April 12, Kevin Simpson opens Why Knot Pizza, adding to the growing list of new businesses for the town.
Located at 6517 Main Street (formerly Fire House Pizza and Maroney’s restaurant), the building features an all wood-paneled dining room with large windows for diners to view Main Street and Lake Champlain. It also will have an outdoor brick-paved seating area for warmer weather.
Why Knot Pizza will feature a menu of pizza, calzones and garlic knots to begin with. Simpson said he hopes to add to the menu as the restaurant grows.
The restaurant will be open Mondays from 11 a.m. to 8 p.m., and Thursdays through Saturdays from 11 a.m. to 8 p.m., Sundays 11 a.m. to 5 p.m. and will be closed on Tuesday and Wednesday.
Simpson, a former employee at Bub’s pizza in Elizabethtown, said after working at Bub’s for the past few years he was ready to venture out and start his own pizza place. After learning about the empty restaurant from friend, he said he was excited to take the chance to try his hand at the business alone.
“The place has been empty for almost a year and I just thought it would be the perfect place for my first business,” Simpson said.
Why Knot will be featuring Bub’s Pizza’s crust and pizza sauce recipe to bring the pizza loved in Elizabethtown to diners further south. Bub’s owner Mike McCarroll said he gave Simpson permission to use the restaurant’s recipes for Why Knot.
The Main Street restaurant, close to many of Westport’s tourist destinations along Rte. 9N, will offer dining opportunities to town’s residents, visitors and those passing through the area.
The restaurant, like Bub’s, will be self-serve style dining. Simpson said he wants to make the place a nice family establishment where families can come enjoy pizza, Westport’s scenery and is an ideal spot for spectator’s to view the fire works on the Fourth of July.
