Discussing 'gluten-free'

Ever wonder what all the buzz is about going gluten free? Well surprisingly, gluten is a food allergen that affects more of us than you may think. Weather you have a gluten sensitivity, allergy, celiac disease or just want to add different whole grains to your diet here are some options for you to experiment with.

Amaranth - This tiny seed has a nutty flavor, is high in protein and has 25 percent more fiber than whole wheat. It contains high amounts of iron, magnesium, zinc and folate.

Buckwheat - A fruit seed related to rhubarb and it is not related to wheat at all. It is a good source of protein containing all eight essential amino acids as well as magnesium, fiber, calcium and iron. Buckwheat also contains the entire range of B-complex vitamins.

Millet - contains more protein than wheat, corn and rice. Millet is good source of fiber, iron and B vitamins.

Quinoa - Sometimes considered a "super grain," quinoa contains all eight essential amino acids and has a protein profile similar to that of milk. It also has more calcium, iron, and magnesium than whole wheat.

Teff - this is the worlds smallest grain, its key nutrients include protein, fiber, calcium, iron, vitamin B1, zinc, and copper.

You can find these grains in the health food section of most supermarkets or health food stores. Most stores even have a gluten free sub-section.
