Some even have an old tradition of pouring hot syrup on snow to form a sticky amber candy.
The area is also famous for it's "fancy grade" maple syrup, an ultra- light amber product that many producers in other regions of the state cannot achieve.
Dona Moser, of the Moser Maple farm in Croghan, said the color of the syrup is especially good this year. Mrs. Moser said she likes the fancy syrup the best because it has more maple flavor. She reserves any darker syrup, which she said has a stronger caramel flavor, for recipes such as sugar bush walnut cake.
