Fat burning chicken curry with apple

I have to admit, the first time I made this recipe I was a little bit skeptical because I wasn't sure anyone would like curry. I was wrong. It was a huge hit with the entire family, even my 3-year-olds ate it up. Now, I always make a larger batch. This recipe may seem intimidating, but it is rather easy and simple to make especially if you have your chicken pre-cooked and ready to go. This meal is great on its own with a side of veggies or you can serve it over brown rice.

Ingredients:

4 cups chopped cooked chicken

2 tbs olive oil

1 cup chopped onion

1 cup chopped peeled apple

1 16 oz can stewed tomatoes with their own juice

1 cup low sodium chicken broth

1 tsp lemon juice

optional garnishes: toasted coconut, mandarin oranges, raisins

Directions:

Heat oil in a large frying pan over medium heat.

Add onion and cook until softened, about 3 minutes.

Add apple, tomatoes and their juice, broth, lemon juice, and curry powder.

Simmer, uncovered for 35 minutes.

Add chicken and heat through, about 5 minutes.

Serve with assorted garnishes on the side.
