The last thing I want to do when the mercury is rising is cook. I turn to fresh salads loaded with healthy ingredients for a quick satisfying meal.
The following meal is loaded with vitamins and minerals from baby spinach, protein from hardboiled eggs, healthy fats from walnuts which are loaded with omega 3s, and healthy natural carbohydrates from the dried cranberries. When possible, try to find dried cranberries without added sugar.
Spinach Cranberry Salad
Salad:
• 4 cups baby spinach
• 4 hardboiled eggs
• 1/3 cup dried cranberries
• 1/4 cup walnuts
Dressing:
• 1/4 cup apple cider vinegar
• 1/4 cup 100 percent cranberry juice
• 2 Tbsp. olive oil
Combine salad ingredients in a large bowl. Whisk together the ingredients for the dressing, combine and enjoy. Serves two.
