Summer vegetable roast

This is one of my favorite recipes to throw together, with the bulk of the ingredients coming right from the garden, or local farmers market. Simple, quick and yummy.

Summer vegetable roast

1-2 zucchini

1-2 summer squash

2 cups of carrots

1 onion sliced

2-3 cloves of garlic sliced thin

1-2 Tbs olive oil

Sea Salt and pepper to taste

Pre-heat the oven to 350 degrees. Slice up all of the ingredients and throw it all into an oven safe dish. Drizzle with olive oil and add sea salt and pepper to taste. Cover with foil and cook for about an hour or until the veggies are tender.
