RICHMOND - Local food is becoming more available throughout the winter months in Vermont. Data released by Richmond-based NOFA Vermont shows the number of farms offering local food this winter directly to customers increased by 54 percent over last winter.
There are 20 farms throughout the state offering CSA (community supported agriculture) winter shares.
While farm fields will be covered with snow, increasing numbers of farmers have found creative strategies to stretch the bounty of the fall harvest over the winter months and allow consumers to eat more local food year-round. Winter CSAs are offering a variety of stored root vegetables, meats, cheeses, breads, eggs, and even fresh greens from season-extending hoop houses and greenhouses.
"While many stores don't offer local produce through the winter months, winter CSAs are a great way to both support farmers, and have a source for high quality, delicious local food all winter long," said Jean Hamilton, food security and marketing coordinator for NOFA Vermont.
